Stinging Nettle + Avocado Soup

Stinging needles are growing everywhere for free and they are really delicious they are full of anti-oxidants and very rich in minerals and vitamins!
Vitamins: A, C and K, as well as several B vitamins
Minerals: Calcium, iron, magnesium, phosphorus, potassium and sodium
Did you know that raw stinging nettles taste just like green beans? But how to eat a stinging nettle raw without getting burned?
Take a leave into your hand, bottom side up - so you don't get burned.
Roll and squeeze the leave between your hands - Enjoy!
What you need for the soup (4 bowls):
2 avocados
300 g young stinging needles (optional: replace 150 gram with bear's garlic)
2 egg yolk
creme fraiche
salt, pepper
1 litre of vegetable bouillon
How to do it:
You can make our own home made bouillon quick and easy by simply boiling celery, leek, carrots, onions, salt, pepper in water. We only need the bouillon, not the veggies.
For the soup:
Peel the avocados and press them through a sieve.
Add salt, pepper and mix with 2 egg yolk.
Mix a little bit of the bouillon with the avocado cream before you add everything to the soup.
Blanch the stinging needles and rinse them with cold water to keep the color
Add them to the soup and blend it until you reach a creamy consistency.
Serve with creme fraiche and decorate with "piment d'espelette".
