Bear's Garlic Soup

Spring is the perfect time to take a walk in the forrest and collect this wonderful herb called wild garlic, wood garlic or bear's garlic. We hope you have as much fun in the forest and preparing below recipe. It is the perfect starter for about 4 people. Preparation time 20- 30 min - without the forest walk. ;)
What you need:
- 300 g bear's garlic
- 2-3 potatoes
- 1/2 leek
- 1 onion
- 1 liter of bouillon
- salt, pepper
- creme fraiche
How to do it:
Wash the bear's garlic and blanch for 5 minutes.
Rinse immediately in ice cold water to keep the green colour.
Cut the onions, potatoes and leek in small pieces and sweat them in butter or oil.
Add the bouillon and cook until the potatoes are soft.
Add the bear's garlic and blend until you get a creamy consistency of your choice. Add salt and pepper.
Serve with 1 spoon of creme fraiche per person
Optional toppings: Cut fresh bear's garlic or add grated cheese
